Corn Relish Recipe
Description: This is an old fashioned relish. It uses a lot of fresh
garden veggies. This old recipe makes a lot of relish, so you can can it.You
may want to cut all ingredients in half.
1 dozen ears corn
1/4 wedge cabbage
1 quart green tomatoes
1 green pepper
1 cup celery
1 quart vinegar
1 cup sugar
1/4 cup salt
1 Teaspoon dry ground mustard
1 Teaspoon black pepper
1/4 teaspoon tumeric
Cut corn kernels from the cobs.
Remove seeds from green pepper and chop.
Clean, peel(as needed), and chop all other vegetables.
Combine all vegetables and 1/2 of the vinegar.
In a small bowl, combine the other half of vinegar and remaining ingredients.
Add to the vegetables and mix together.
Heat to boiling and simmer for 40 minutes.
Fill clean pints jars and seal.
