Artichoke Casserole Recipe

Description: If you like Artichokes, this is a nice recipe to try. It's quick to make, too.

Yield: 4 cups


Ingredients:

  • 10 ounces Artichoke Hearts, cooked and drained

  • 4 ounces sliced Mushrooms

  • 1 tablespoon Margarine

  • 1 can (11oz.) Cheddar Cheese soup

  • 1/2 cup milk

  • 2 Tbs. cooking Sherry

  • 1 1/2 cups Rice, cooked

  • Paprika

  • Salt and Pepper, to taste


Preparation Directions:

  1. Preheat oven to 350 degrees.

  2. In a saucepan, brown the mushrooms in margarine.

  3. Add the margarine, soup, milk, and cooking sherry.

  4. In a 1 quart casserole dish, combine the rice, artichokes and soup mixture.

  5. Bake in oven for 30 minutes.

  6. Remove from oven and sprinkle Paprika on top.

  7. Serve hot.
