Swiss Steak with Vegetables Recipe
Description: Use your fresh garden vegetables with this recipe. Don't
hesitate to substitute, or to add other garden veggies that are ripe when
you make this recipe.
Yield: 4 servings
Ingredients:
| 1 1/2 pounds |
Round Steak, about 3/4" thick |
| 2 Tbs. |
Vegetable Oil |
| 1 can |
Condensed Onion Soup |
| 1/2 cup |
Water |
| 1/4 tsp. |
Salt |
| 4 |
Carrots, peeled, cut into wheels |
| 4 |
Potatoes, peeled, cut into quarters. |
| 2 Tbs. |
Flour |
| 1 Tbs. |
Parsley, chopped |
| 1/2 tsp. |
Salt |
| 1/8 tsp. |
Pepper |
Tip: If you add softer vegetables, like peas, summer squash, and corn,
add them during the last half hour of cooking.
Preparation Directions:

Pound meat, then cut into 1 inch cubes.

In a skillet, brown meat in vegetable oil.

Add in onion soup, 1/4 cup of water, salt and pepper.

Cover and cook on low heat for 30 minutes.

Add potatoes and carrots.

Cook another 1 hour, stirring occasionally.

Mix flour in 1/4" cold water. Shake to mix well.

Slowly blend flour and water into the pan, stirring as you add it.

Cook and stir until sauce has thickened.

Sprinkle parsley over the meal.

Serve hot.
