Harvard Beets Recipe

Description:  This is a basic recipe for cooking beets. Chances are you've eaten this recipe many times before. Now you can make it with your fresh grown beets.

Yield: 6 servings


Ingredients:

  • 3 tablespoons corn starch

  • 1/3 cup sugar

  • 3/4 teaspoon salt

  • 1 1/2 cups beet liquid (from cooking beets)

  • 2 tablespoons vinegar

  • 1 1/2 tablespoons butter or margarine

  • 3 cups beets, sliced and cooked


Preparation Directions:

  1. Mix cornstarch, sugar and salt.

  2. Blend in beet liquid, vinegar and butter.

  3. Cook over medium heat, stirring constantly.

  4. Add beets to sauce.

  5. Let stand 10 minutes, to blend flavors.

  6. Re-heat and serve hot.
